Research Interests

Dr. Shikany's interests include the association between diet and the epidemiology and prevention of chronic disease (including cancer and cardiovascular disease), with special emphasis on antioxidants, dietary fats, and glycemic index/glycemic load. He is an Associate Scientist with the Minority Health & Research Center, Comprehensive Cancer Center, Clinical Nutrition Research Center, and Diabetes Research and Training Center and a Scientist with the Center for Aging.
